  • 1 1/2 lb boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp cornstarch
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, finely minced
  • 1/4 cup honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 1 tbsp apple cider vinegar or rice vinegar
  • Pinch of red pepper flakes (optional)
  • Chopped fresh parsley or green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Pat chicken pieces dry with paper towels.
  2. In a mixing bowl, toss chicken cubes with salt, black pepper, garlic powder, and cornstarch until evenly coated.
  3. Heat a large skillet over medium-high heat for about 2 minutes. Add 1 tablespoon butter and swirl to coat.
  4. Add chicken cubes in a single layer. Sauté for 3-4 minutes without stirring too much for a golden crust. Flip and cook another 3-4 minutes until all sides are golden and chicken is cooked through (internal temp 165°F). Cook in batches if needed.
  5. Reduce heat to medium-low. Push chicken to one side of the skillet. Add remaining 2 tablespoons butter to the empty side, followed by garlic. Sauté garlic for 30 seconds until fragrant.
  6. Pour in honey, soy sauce, and vinegar. Stir with garlic and butter, then mix everything with chicken until bites are well coated. Add red pepper flakes if using.
  7. Let sauce simmer for 2-3 minutes, stirring occasionally, until thickened and glossy. If sauce is too thin, cook another minute; if too thick, add a splash of water.
  8. Remove skillet from heat. Taste and adjust seasoning. Garnish with parsley, green onions, sesame seeds, and lemon wedges if desired.
  9. Serve hot over rice, quinoa, in wraps, or on salad greens.

Notes

For gluten-free, use tamari instead of soy sauce and certified gluten-free cornstarch. For dairy-free, substitute butter with olive oil. Don’t overcrowd the pan for best browning. Fresh garlic gives the best flavor. If sauce thickens too much, add a splash of water. Leftovers taste even better the next day.
