A simple and delicious side dish featuring tender roasted carrots glazed with honey and infused with fresh thyme, perfect for any occasion.

  • 1.5 pounds (700 grams) carrots, peeled and cut into sticks or rounds
  • 3 tablespoons (60 ml) raw or local honey
  • 2 teaspoons fresh thyme leaves or 4-5 sprigs (stems removed)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • ½ teaspoon (3 grams) fine sea salt
  • ¼ teaspoon (1 gram) freshly ground black pepper
  • 1 teaspoon (5 ml) freshly squeezed lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into uniform sticks or rounds about ½ inch thick.
  3. In a large mixing bowl, combine honey, olive oil, salt, and pepper. Add lemon juice if using and stir until well blended.
  4. Add the carrots to the bowl and toss thoroughly to coat each piece with the honey mixture. Add fresh thyme leaves or sprigs, crushing sprigs slightly to release flavor.
  5. Spread the carrots in a single layer on a rimmed baking sheet, avoiding overcrowding.
  6. Roast for 25-30 minutes, stirring once halfway through, until carrots are tender and caramelized.
  7. Check tenderness by piercing a carrot with a fork; roast an additional 5 minutes if needed.
  8. Serve warm, garnished with fresh thyme sprigs.

Notes

Warm honey slightly if very thick to coat carrots evenly. Toss carrots halfway through roasting for even browning. Use fresh thyme for best flavor. If honey burns, reduce oven temperature to 375°F and roast longer. Lemon juice brightens the dish and should be added before roasting.
