  • ½ cup (120 ml) honey
  • 1 cup (200 g) brown sugar
  • ½ cup (120 ml) pineapple juice
  • 2 tablespoons (30 ml) Dijon mustard
  • ½ teaspoon (1 g) ground cloves (optional)
  • ¼ teaspoon (0.5 g) ground cinnamon (optional)
  • 68 pineapple rings, canned or fresh
  • Maraschino cherries (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the spiral ham from packaging and place it flat side down in your roasting pan. Remove any plastic disk covering the bone.
  3. In a small saucepan, combine honey, brown sugar, pineapple juice, Dijon mustard, ground cloves, and cinnamon. Warm over medium heat, stirring frequently until sugar dissolves and glaze thickens slightly, about 5-7 minutes.
  4. Brush a generous layer of glaze over the entire ham, making sure to get the glaze into the spiral cuts.
  5. Cover the roasting pan loosely with aluminum foil and roast the ham for 1 hour 30 minutes to 2 hours, or until heated through (internal temperature of 140°F / 60°C). Baste with additional glaze every 20-30 minutes.
  6. About 15 minutes before done, remove the foil. Arrange pineapple rings over the ham, securing with toothpicks if needed. Spoon more glaze over the top and sprinkle maraschino cherries in the centers if desired.
  7. Return the ham to the oven uncovered and roast for 10-15 minutes more to caramelize the glaze and brown the pineapple rings slightly.
  8. Remove from oven and let rest for 10 minutes to allow juices to redistribute.
  9. Slice and serve warm using the spiral cuts for easy portioning.

Baste the ham every 20-30 minutes to keep it moist and build a sticky glaze crust. Use a meat thermometer to ensure the internal temperature reaches 140°F (60°C). Let the ham rest for 10 minutes after cooking for juicier slices. Watch the glaze closely during the last 15 minutes to avoid burning; tent with foil if needed.
