  • 46 strips turkey bacon

  • 1 tablespoon mayonnaise (optional, for creamy texture)
  • 1 teaspoon lemon juice
  • Black pepper, to taste
  • 12 tablespoons softened butter (for spreading on bread)
  • Optional: tomato slices

  • Optional: baby spinach or arugula

Instructions

  1. Place turkey bacon strips in a cold skillet. Turn heat to medium and cook for 4-6 minutes, flipping occasionally, until crispy and golden. Transfer to a paper towel-lined plate to drain.
  2. In a small bowl, whisk together honey, Dijon mustard, mayonnaise (if using), lemon juice, and black pepper. Adjust sweetness or tang to taste.
  3. Spread a thin layer of softened butter on one side of each sourdough bread slice.
  4. Lay half the bread slices, buttered side down, on a cutting board. Spread 1-2 tablespoons of honey mustard sauce on each.
  5. Add a layer of Swiss cheese, then arrange 2-3 strips of cooked turkey bacon over the cheese. Add optional toppings if desired. Top with another layer of Swiss cheese.
  6. Cover with remaining bread slices, buttered side up.
  7. Heat skillet over medium-low. Place sandwiches in skillet, buttered side down. Cook for 3-4 minutes, pressing gently with a spatula, until golden and cheese starts to melt.
  8. Flip carefully and cook another 2-3 minutes on the second side until crisp and gooey.
  9. Transfer sandwiches to a cutting board. Let rest for 1 minute, then slice diagonally and serve warm.
  10. Troubleshooting: If cheese isn’t melting, cover skillet for 30 seconds. If bread burns, lower heat and watch closely.

For best results, use thick-cut turkey bacon and layer cheese both above and below the bacon. Medium-low heat prevents burning and ensures melty cheese.
