  • 4 chicken thighs (bone-in, skin-on)
  • 1/4 cup hot honey (store-bought or homemade)
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs generously with garlic powder, smoked paprika, salt, and pepper on both sides.
  3. Heat a cast iron skillet over medium-high heat. Add olive oil and let it heat until shimmering.
  4. Place the chicken thighs skin-side down in the skillet. Cook for 4-5 minutes until the skin is golden and crispy. Flip the chicken and cook for another 3-4 minutes.
  5. Transfer the skillet to the oven and bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. While the chicken is baking, prepare the hot honey glaze. In a small saucepan, gently warm the hot honey over low heat until it’s slightly runny.
  7. Remove the chicken from the oven and drizzle the hot honey generously over each piece. Sprinkle crumbled feta on top.
  8. Optional: Return the skillet to the oven for 2-3 minutes to slightly melt the feta.
  9. Garnish with freshly chopped parsley and serve immediately while warm.

Notes

For a dairy-free option, substitute vegan feta. Adjust the spice level by modifying the chili flakes in the hot honey. Use a meat thermometer to ensure the chicken is cooked to perfection.
