A refreshing and easy-to-make sparkling mocktail combining fresh pomegranate juice, aromatic rosemary, and sparkling water for a lively, healthful drink perfect for any occasion.

  • 1 cup (240 ml) fresh pomegranate juice, cold-pressed and unsweetened
  • 23 fresh rosemary sprigs, gently bruised
  • 1 cup (240 ml) sparkling water, chilled
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 tablespoon (15 ml) simple syrup (homemade or store-bought, adjust to taste)
  • Ice cubes (optional: with frozen pomegranate seeds inside)
  • A handful of pomegranate seeds for garnish

Instructions

  1. Chill sparkling water and serving glasses.
  2. Rinse 2-3 rosemary sprigs and gently bruise them with a muddler or back of a spoon to release oils.
  3. Slice one lemon and squeeze out 1 tablespoon (15 ml) of fresh lemon juice.
  4. In a mixing glass or small pitcher, combine 1 cup (240 ml) fresh pomegranate juice, 1 tablespoon (15 ml) simple syrup, and fresh lemon juice. Stir gently to mix.
  5. Add the bruised rosemary sprigs to the juice mixture and let it infuse for 3-5 minutes.
  6. Fill serving glass with ice cubes (optionally with frozen pomegranate seeds).
  7. Strain the juice mixture over the ice to avoid large rosemary bits, or leave them in for rustic presentation.
  8. Slowly pour 1 cup (240 ml) chilled sparkling water into the glass and stir gently once or twice to combine without losing fizz.
  9. Garnish with a fresh rosemary sprig and a few pomegranate seeds on top.
  10. Serve immediately to enjoy full sparkle and aroma.

Notes

Bruise rosemary gently to release oils without overpowering the drink. Adjust simple syrup to taste for sweetness. Keep sparkling water chilled and stir gently to preserve fizz. Prepare rosemary-infused juice ahead and refrigerate up to 24 hours, adding sparkling water and ice before serving. Garnish with fresh rosemary and pomegranate seeds for aroma and texture.
