A rich and silky chocolate mousse infused with Bailey’s Irish Cream, perfect for cozy nights or special celebrations. This quick and easy dessert combines the creamy, boozy flavor of Irish cream with deep dark chocolate for an indulgent treat.

  • 6 oz (170 g) dark chocolate (60-70% cocoa), chopped
  • 1/3 cup (80 ml) Bailey’s Irish Cream
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: whipped cream and chocolate shavings for garnish

Instructions

  1. Set up a double boiler by filling a saucepan with an inch or two of water and bringing it to a gentle simmer. Place a heatproof bowl on top, making sure it doesn’t touch the water. Add the chopped dark chocolate and stir occasionally until fully melted and smooth, about 5 minutes.
  2. While the chocolate cools slightly to room temperature, pour the cold heavy cream, sugar, vanilla extract, and a pinch of salt into a mixing bowl. Whip with an electric mixer or by hand until soft peaks form, about 3-5 minutes.
  3. Stir the Bailey’s Irish Cream into the warm (not hot) melted chocolate until fully incorporated.
  4. Add about a third of the whipped cream to the chocolate mixture and gently fold it in using a spatula. Then fold in the remaining whipped cream carefully until no streaks remain, keeping the mousse airy and light.
  5. Spoon the mousse into serving glasses or ramekins. Cover and refrigerate for at least 2 hours or overnight for best results.
  6. Before serving, top with a dollop of whipped cream and chocolate shavings if desired.

Notes

Use high-quality dark chocolate (60-70% cocoa) for best flavor. Avoid overheating chocolate to preserve Bailey’s flavor. Whip cream to soft peaks to maintain mousse texture. Chill mousse at least 2 hours or overnight for best results. For dairy-free version, substitute heavy cream with coconut cream and use dairy-free chocolate. Non-alcoholic version can use vanilla extract and cream instead of Bailey’s.
