Irresistible Balsamic Chicken Breast Recipe with Mozzarella

A delicious and comforting dish combining tangy balsamic glaze, juicy chicken breasts, ripe tomatoes, and creamy mozzarella cheese. Perfect for weeknights or special occasions.

  • 4 medium-sized boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 slices fresh mozzarella
  • 1 cup cherry tomatoes, halved
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with a paper towel and season both sides generously with salt, pepper, and Italian seasoning.
  2. In a small mixing bowl, whisk together balsamic vinegar, olive oil, honey, and minced garlic to make the balsamic glaze. Set aside.
  3. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil and sear the chicken breasts for 2-3 minutes per side until golden brown. Remove from heat.
  4. Pour the balsamic glaze over the chicken in the skillet. Arrange the halved cherry tomatoes around the chicken breasts. Top each piece of chicken with 1-2 slices of fresh mozzarella.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes. Sprinkle fresh basil over the top and serve warm.
