Irresistible Banana Bread Cookies

A perfect fusion of moist banana bread and chewy cookies, these banana bread cookies are soft, sweet, and ideal for snacking.

  • 2 ripe bananas (about 1 cup mashed)
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • Optional: ½ cup (90g) chocolate chips, chopped walnuts, pecans, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, combine ½ cup (113g) of unsalted butter, softened, ½ cup (100g) of brown sugar, and ¼ cup (50g) of granulated sugar. Use a hand mixer or stand mixer to beat until creamy and fluffy, about 2-3 minutes.
  3. Add one large egg and 1 teaspoon of vanilla extract to the creamed mixture. Beat until fully incorporated, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together 1½ cups (190g) of all-purpose flour, ½ teaspoon of baking soda, ¼ teaspoon of salt, and ½ teaspoon of ground cinnamon.
  5. Peel and mash 2 ripe bananas (about 1 cup mashed) until smooth. Add the mashed bananas to the wet mixture and gently mix until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing to keep the cookies tender.
  7. Optional: Fold in ½ cup (90g) of chocolate chips, nuts, or dried fruit for extra flavor and texture.
  8. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  10. Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
