Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) cornstarch
  • 2 large eggs
  • Salt and pepper to taste
  • Vegetable oil or peanut oil for frying
  • 1/2 cup (120g) mayonnaise
  • 1/4 cup (60ml) sweet chili sauce
  • 1 tablespoon (15ml) sriracha
  • 1 tablespoon (15ml) honey
  • 1 teaspoon (5ml) rice vinegar
  • Optional garnish: chopped green onions
  • Optional garnish: sesame seeds

Instructions

  1. Cut the chicken breasts into bite-sized pieces and pat them dry with a paper towel.
  2. In a bowl, whisk together all-purpose flour, cornstarch, salt, and pepper. In another bowl, beat the eggs.
  3. Dip each chicken piece into the flour mixture, then the egg, and back into the flour mixture to coat evenly.
  4. Heat about 2 inches of vegetable oil in a frying pan or deep fryer to 350°F (175°C).
  5. Fry the coated chicken pieces in batches for 3-4 minutes per side until golden and crispy. Transfer to a cooling rack lined with paper towels.
  6. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar to make the bang bang sauce.
  7. Toss the fried chicken with the sauce or serve the sauce on the side for dipping.

Notes

For a gluten-free version, use rice flour instead of all-purpose flour. Monitor oil temperature to ensure crispy chicken. Customize the sauce by adjusting the spice level.
