These chocolate-covered strawberry cinnamon roll bites combine warm, gooey cinnamon rolls with fresh strawberries and a rich chocolate coating, making a quick and perfect treat for parties.

Ingredients

Scale
  • 1 package (8 rolls) refrigerated cinnamon roll dough (recommend Pillsbury)
  • About 12 medium-sized fresh strawberries, hulled and sliced
  • 6 ounces (170g) unsweetened baking chocolate or semi-sweet chocolate chips
  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar mixed with 1 teaspoon ground cinnamon (optional)
  • 1/4 cup powdered sugar (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking sheet with parchment paper or a silicone baking mat.
  2. Unroll the cinnamon roll dough on a clean surface and gently press it out to flatten slightly without tearing.
  3. Slice the fresh strawberries thinly and spread the slices evenly over the dough, leaving a small border around the edges.
  4. Carefully roll the dough back up tightly, starting from the longer side if rectangular, ensuring the strawberries stay in place.
  5. Slice the rolled dough into 12 equal pieces, about 1 inch thick. Place each piece cut side up on the prepared baking sheet, leaving space between them.
  6. Sprinkle the cinnamon sugar mix lightly over each roll if desired.
  7. Bake for 15-18 minutes, or until the rolls are golden brown and cooked through.
  8. While the rolls bake, melt the chocolate and butter together using a microwave in 30-second bursts, stirring in between, or gently melt over a double boiler until smooth and glossy.
  9. Remove the rolls from the oven and let cool for about 10 minutes until warm but not hot.
  10. Dip each cinnamon roll bite halfway into the melted chocolate using tongs or a fork, shaking off excess chocolate gently.
  11. Set the dipped bites on a cooling rack or parchment paper to let the chocolate harden, about 20 minutes at room temperature or 10 minutes in the fridge.
  12. Optionally, dust with powdered sugar or drizzle extra melted chocolate before serving.

Notes

Use fresh, firm strawberries to prevent sogginess. Do not overbake the rolls to keep them soft. Melt chocolate slowly to avoid seizing. Dip rolls while warm for better chocolate adhesion. You can refrigerate dipped bites to speed up chocolate setting.
