Ingredients

Scale
  • 2 ¼ cups (280 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¾ cup (165 g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (about 200 g) chocolate peppermint bark, roughly chopped
  • 1 cup (175 g) mini semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, sift or whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to beat the softened butter with granulated sugar and brown sugar on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Slowly add the flour mixture to the wet ingredients and mix on low speed just until combined. Do not overmix.
  6. Gently fold in the chopped chocolate peppermint bark and mini chocolate chips.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheet.
  8. Bake for 10-12 minutes until edges are set and starting to brown but centers still look slightly soft.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Keep peppermint bark pieces about ¼ inch for best texture. If dough is too sticky after adding peppermint bark, chill for 15 minutes before scooping. Do not overmix dough to avoid tough cookies. Check cookies at 10 minutes to avoid overbaking for chewy centers.
