  • 1/2 cup (120ml) heavy cream, warmed
  • 2 tsp instant coffee granules
  • 2 tbsp (28g) unsalted butter, softened
  • 1 tsp vanilla extract
  • Cocoa powder for rolling the truffles
  • Optional: pinch of sea salt
  • Optional: espresso powder
  • Optional: dash of cinnamon or cardamom

Instructions

  1. Prepare the chocolate: In a double boiler or microwave-safe bowl, gently melt the dark chocolate until smooth. If using the microwave, heat in 20-second increments, stirring between each to prevent burning.
  2. Heat the cream: Warm the heavy cream in a small saucepan over low heat until it’s just steaming—don’t let it boil.
  3. Combine the coffee and cream: Stir the instant coffee granules into the warm cream until completely dissolved.
  4. Mix the ganache: Gradually pour the warm cream mixture into the melted chocolate, stirring continuously until smooth. Add the softened butter and vanilla extract, mixing until fully incorporated.
  5. Chill the ganache: Transfer the mixture to a bowl and refrigerate for 2-3 hours, or until firm enough to scoop.
  6. Shape the truffles: Using a small cookie scoop or teaspoon, portion the ganache into bite-sized balls. Roll them between your palms to smooth them out.
  7. Coat the truffles: Roll each ball in cocoa powder until fully coated. For an extra touch, you can sift the cocoa powder over the truffles for a more uniform finish.
  8. Store or serve: Place the truffles on a parchment-lined baking sheet and refrigerate until ready to serve. They’re best enjoyed slightly chilled or at room temperature.
