  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/3 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. In a large bowl, use an electric mixer to cream the softened butter and sugar substitute until light and fluffy, about 2-3 minutes.
  4. Beat the eggs into the butter mixture one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in chopped nuts or sugar-free chocolate chips if desired.
  6. Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared cookie sheets. Flatten slightly with the back of a spoon.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Avoid overbaking.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
