  • ½ cup unsalted butter, cold and cubed
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 12 tablespoons cold water
  • Pinch of salt
  • Lemon curd (store-bought or homemade)
  • Chocolate ganache (made with heavy cream and dark chocolate, 60-70% cocoa)
  • Vanilla pastry cream (custard made with milk, sugar, egg yolks, and vanilla bean)
  • Fresh berries (strawberries, blueberries, raspberries)
  • Whipped cream (lightly sweetened, optional garnish)
  • Edible flowers or mint leaves (for garnish)
  • Mini macarons or meringue kisses
  • Assorted nuts (toasted almonds or pistachios)
  • Dark chocolate shavings or curls

Instructions

  1. In a bowl, whisk together 1 ½ cups flour, ¼ cup powdered sugar, and a pinch of salt.
  2. Cut in ½ cup cold cubed butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Add 1 egg yolk and 1 tablespoon cold water; mix gently until dough just comes together. Add another tablespoon water if too dry.
  4. Wrap dough in plastic and chill for at least 30 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Lightly flour work surface and roll dough to about 1/8 inch thickness.
  7. Cut circles slightly larger than mini tart pans and press dough into pans, trimming excess.
  8. Prick bottoms with a fork and chill for 10 minutes.
  9. Place tart pans on baking sheet and bake for 12-15 minutes until edges are golden.
  10. Cool tart shells on wire rack.
  11. Prepare fillings: whisk lemon curd, chocolate ganache, and vanilla pastry cream in separate bowls.
  12. Fill cooled tart shells with fillings, mixing and matching flavors.
  13. Garnish with fresh berries, edible flowers, mint, nuts, and chocolate shavings.
  14. Add mini macarons or meringue kisses around tarts for texture.
  15. Optionally dust with powdered sugar before serving.
  16. Serve immediately or refrigerate until ready to share.

Notes

Chill dough properly to avoid sticky handling and misshapen tarts. Do not overfill tart shells to prevent spills. Tart shells can be baked up to 2 days ahead and stored airtight at room temperature. Assemble just before serving to keep crust crisp. Store leftovers refrigerated up to 2 days. Reheat shells briefly at 325°F for 5 minutes to refresh.
