Irresistible Galentine’s Sweet Berry Sunrise Board

A vibrant and beautifully arranged board featuring fresh berries, creamy cheeses, sweet drizzles, and crunchy nuts, perfect for Galentine’s brunch or any gathering.

Ingredients

  • Strawberries, sliced
  • Raspberries
  • Blueberries
  • Blackberries
  • Mascarpone or ricotta cheese (8 oz / 225 g)
  • Optional: Brie or goat cheese wedge
  • Honey or agave drizzle (2-3 tablespoons)
  • Toasted almonds or pecans (1/2 cup / 60 g)
  • Thinly sliced baguette, buttery crackers, or crostini
  • Dark chocolate chunks or curls (2 oz / 60 g)
  • Optional extras: fresh mint leaves, edible flowers, Greek yogurt or whipped cream for dipping

Instructions

  1. Rinse all berries gently under cold water and pat dry with paper towels. Slice the strawberries into thin, even slices about 1/4 inch thick. Set aside raspberries, blueberries, and blackberries whole.
  2. Toast almonds or pecans in a dry skillet over medium heat, stirring frequently until fragrant and lightly browned, about 3-4 minutes. Remove from heat and let cool.
  3. Cut the baguette into thin slices about 1/4 inch thick. Optionally, toast slices lightly in the oven at 350°F (175°C) for 5 minutes.
  4. Spoon mascarpone or ricotta into small piles or spreadable mounds on the board. If using brie or goat cheese, cut into small wedges and arrange on the board.
  5. Arrange cheeses evenly spaced around the board. Fan sliced strawberries near one cheese pile. Fill gaps with clusters of whole berries, toasted nuts, and chocolate chunks. Group crackers and bread slices in one or two areas. Add small bowls or ramekins with honey and yogurt or whipped cream.
  6. Scatter fresh mint leaves and edible flowers if using. Drizzle honey over cheese and some berries for a glossy finish.

Notes

Do not overcrowd the board to allow each element to stand out. Keep the board chilled if preparing ahead to keep berries fresh and cheeses firm. Serve within 1-2 hours for best flavor and texture. Let mascarpone or ricotta sit at room temperature for 15 minutes before plating for easier spreading. Toast nuts just before assembling for best crunch and flavor. Store bread and crackers separately to avoid sogginess.
