  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (60g) plain Greek yogurt
  • 1 large egg
  • 1/4 cup (60g) melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup (85g) semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together all-purpose flour, unsweetened cocoa powder, and salt. Set aside.
  3. In another bowl, combine granulated sugar, brown sugar, plain Greek yogurt, egg, melted butter, and vanilla extract. Whisk until smooth and well combined.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula. Stop mixing when just combined.
  5. If using chocolate chips, gently fold them into the batter.
  6. Pour the batter into the prepared pan, spreading it evenly.
  7. Bake for 18-22 minutes. The edges should be set, but the center should look slightly underdone for a fudgy texture.
  8. Let the brownies cool in the pan for about 10 minutes, then transfer to a wire rack. Slice into squares and enjoy.
