A moist and tender loaf cake combining zesty lemon and sweet blueberries with tangy Greek yogurt for a fresh, flavorful treat perfect for brunch or snacks.

  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • 1 cup (245g) plain full-fat Greek yogurt
  • 2 large eggs, room temperature
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • ⅓ cup (80ml) vegetable oil (can substitute with melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh blueberries, tossed with 1 teaspoon flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk the sugar and Greek yogurt until smooth. Add eggs one at a time, beating well after each addition.
  4. Stir in lemon juice, lemon zest, vegetable oil, and vanilla extract until combined.
  5. Gently fold the dry ingredients into the wet mixture until just incorporated; a few lumps are fine.
  6. Toss blueberries with a teaspoon of flour and fold gently into the batter.
  7. Pour batter into the prepared loaf pan and smooth the top. Tap the pan lightly to release air bubbles.
  8. Bake for 50-60 minutes, checking at 50 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve warm or at room temperature. Optionally, drizzle with a lemon glaze made from powdered sugar and lemon juice.

Notes

Use room temperature eggs for better mixing. Toss blueberries in flour to prevent sinking. Do not overmix batter to keep loaf tender. If loaf browns too quickly, tent with foil halfway through baking. Cool completely before slicing for cleaner cuts. Frozen blueberries can be used if thawed and dried well.
