  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon salt, or to taste
  • 3/4 cup water
  • Optional: chili powder or cayenne pepper for extra heat

Instructions

  1. Soak 1 cup of raw cashews in water for at least 4 hours or overnight. Alternatively, boil the cashews for 10 minutes to soften them quickly.
  2. Drain the soaked cashews and add them to a high-speed blender.
  3. Add 3 tablespoons of nutritional yeast, 2 tablespoons of lemon juice, 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, 1/4 teaspoon of ground turmeric, 1/2 teaspoon of salt, and 3/4 cup of water to the blender.
  4. Blend the mixture on high until completely smooth and creamy, scraping down the sides as needed.
  5. Taste the sauce and adjust the seasoning. Add more salt, lemon juice, or spices to suit your preferences. For extra heat, add chili powder or cayenne pepper.
  6. Transfer the blended sauce to a small saucepan and heat over medium heat, stirring constantly. The sauce will thicken slightly as it warms up, but avoid boiling.
  7. Pour the warm nacho cashew cheese sauce into a bowl and serve immediately with tortilla chips, fresh veggies, or drizzle over nachos.
