Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup corn syrup (light or dark)
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang.
  2. In a mixing bowl, cream together 1 cup (2 sticks) of softened butter, 2 cups of all-purpose flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt until the dough forms a crumbly texture.
  3. Transfer the crust mixture into the prepared baking pan and press it down firmly and evenly.
  4. Bake the crust for 15 minutes, or until lightly golden. Set aside to cool slightly.
  5. In another mixing bowl, whisk together 3 large eggs, 1 cup corn syrup, 1 cup granulated sugar, 1 teaspoon pure vanilla extract, and 1/2 teaspoon salt. Stir in 1/4 cup melted butter and 2 cups chopped pecans.
  6. Pour the pecan mixture evenly over the baked crust, ensuring the pecans are distributed evenly.
  7. Return the pan to the oven and bake for 30–35 minutes, or until the filling is set and golden brown. It should jiggle slightly in the center but not be liquid.
  8. Let the bars cool completely in the pan before using the parchment paper to lift them out. Slice into squares or rectangles and serve.
