Irresistible Ravioli Carbonara Recipe Easy Dinner Idea

Tender ravioli coated in a creamy, smoky carbonara sauce, topped with crispy pancetta bits and Parmesan. A quick and indulgent dinner ready in under 30 minutes.

Ingredients

  • 1 pound (450g) fresh ravioli (cheese or spinach)
  • 4 ounces (115g) pancetta, diced
  • 3 large egg yolks
  • 1/4 cup (60ml) heavy cream
  • 1/2 cup (50g) Parmesan cheese, grated (plus extra for garnish)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Flat-leaf parsley, optional for garnish

Instructions

  1. Bring a pot of salted water to a boil. Add the ravioli and cook according to package instructions (usually 3-5 minutes). Drain and set aside, reserving 1/4 cup (60ml) of pasta water.
  2. Heat a large skillet over medium heat. Add the olive oil and pancetta, cooking until the pancetta is crispy and golden brown, about 5 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  3. Add the minced garlic to the skillet and sauté for 30 seconds until fragrant. Be careful not to burn it!
  4. In a mixing bowl, whisk together the egg yolks, heavy cream, grated Parmesan, and a pinch of salt and pepper. Slowly whisk in the reserved pasta water to loosen the sauce.
  5. Lower the skillet heat to medium-low. Add the cooked ravioli and pour the sauce mixture over the top. Toss gently to coat the ravioli in the creamy sauce.
  6. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly and clings to the ravioli. Add the crispy pancetta back to the skillet.
  7. Taste and adjust seasoning with salt and pepper as needed. Garnish with additional Parmesan and parsley, if desired.

Notes

Use low heat to prevent the sauce from curdling. Reserve pasta water to help bind the sauce. Customize with red pepper flakes or spinach for added flavor and nutrients.
