Irresistible Shrimp and Crab Bisque

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 4 cups seafood or chicken stock
  • 1 cup heavy cream
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup lump crab meat
  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Dice the onion, mince the garlic, and chop the parsley. Peel and devein the shrimp, and set aside.
  2. Heat the butter and olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Sprinkle flour over the sautéed onions and garlic. Stir constantly for 1-2 minutes to cook out the raw taste of the flour.
  4. Gradually pour in the seafood or chicken stock, whisking to combine. Stir in the tomato paste and bring the mixture to a gentle simmer.
  5. Slowly pour in the heavy cream, stirring to create a smooth, creamy base. Let the bisque simmer for about 10 minutes.
  6. Toss in the peeled and deveined shrimp, followed by the lump crab meat. Cook for 5-7 minutes, or until the shrimp are pink and cooked through.
  7. Add Old Bay seasoning, salt, and pepper to taste. Adjust seasonings as needed.
  8. Ladle the bisque into bowls and garnish with fresh parsley. Enjoy warm!
