  • 6 cups low-sodium chicken broth
  • 1/4 cup soy sauce or tamari (gluten-free option)
  • 2 tablespoons miso paste
  • 4 cloves garlic, minced or thinly sliced
  • 1 tablespoon fresh ginger, sliced
  • 4 green onions, chopped (plus extra for garnish)
  • 8 ounces ramen noodles (fresh or dried)
  • 1 cup carrots, julienned or thinly sliced
  • 2 cups baby spinach
  • 4 eggs, soft-boiled
  • 1 tablespoon sesame oil
  • Optional toppings: sriracha, nori, sesame seeds, mushrooms

Instructions

  1. Mince the garlic, slice the ginger, and chop the green onions. Set aside toppings like spinach, carrots, and soft-boiled eggs.
  2. Place the chicken thighs at the bottom of the slow cooker. Add chicken broth, soy sauce, miso paste, garlic, and ginger. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and flavors meld.
  4. About 20 minutes before the slow cooker finishes, bring a pot of water to a boil and cook ramen noodles according to package instructions. Drain and set aside.
  5. Use tongs to remove chicken thighs from the slow cooker. Let cool slightly, then shred the meat using two forks. Discard bones and skin.
  6. Return shredded chicken to the slow cooker. Add spinach and carrots, stirring until spinach wilts.
  7. Bring a small pot of water to a boil. Carefully add eggs and cook for 6 minutes for soft-boiled. Transfer to an ice bath for 2 minutes, then peel.
  8. Divide cooked noodles into bowls. Ladle broth and chicken over noodles, then top with spinach, carrots, green onions, and soft-boiled eggs. Drizzle sesame oil on top and add optional toppings.
