These slow cooker lentil tacos are packed with plant-based protein and bursting with bold, zesty flavors, making them a delicious and healthy weeknight favorite.

  • 1 cup dry brown lentils
  • 3 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Optional toppings: shredded lettuce, diced avocado, salsa, shredded cheese, sour cream or vegan alternatives

Instructions

  1. Dice the onion and mince the garlic. Rinse and drain the lentils.
  2. In the slow cooker, add lentils, vegetable broth, diced onion, minced garlic, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Stir until well combined.
  3. Set the slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours. Stir occasionally if possible.
  4. Once lentils are tender and have absorbed most of the liquid, taste and adjust seasoning as needed.
  5. Heat tortillas in a skillet or microwave until soft and warm.
  6. Spoon lentil mixture into tortillas and add desired toppings like avocado, salsa, or shredded lettuce.
