This smashed carrots recipe transforms humble carrots into a crispy, caramelized side dish packed with flavor and perfect for any occasion.

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or rosemary
  • 1 tablespoon butter (optional)
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large pot, bring water to a boil and add a generous pinch of salt. Add the carrots and boil for 10-12 minutes, or until fork-tender but not mushy.
  3. Drain the carrots thoroughly and let them sit for a few minutes to dry slightly.
  4. Place the boiled carrots on the prepared baking sheet. Using a potato masher or fork, gently press down on each carrot until flattened but still intact.
  5. Drizzle olive oil over the smashed carrots, then sprinkle with garlic, salt, pepper, and your chosen herbs. If using butter, add a small pat on top of each carrot.
  6. Place the tray in the oven and roast for 20-25 minutes, flipping halfway through. The carrots should be golden brown and crispy around the edges.
  7. Remove the carrots from the oven and drizzle with honey or maple syrup while still warm. Serve immediately.

Ensure carrots are dry before smashing to achieve crispy edges. Experiment with toppings like grated Parmesan or crushed nuts for added texture.
