These St. Patrick’s Mint Cheesecake Crumb Bars combine a buttery crumb crust with a creamy mint-infused cheesecake filling, perfect for festive desserts and easy to make.

  • 2 ½ cups (315g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 cup (226g) cold unsalted butter, cubed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 16 oz (450g) cream cheese, softened
  • ⅔ cup (135g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon mint extract
  • a few drops green food coloring (optional)
  • ¼ cup (60g) sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, combine flour, ¾ cup sugar, cinnamon, and salt. Mix evenly.
  3. Add cold cubed butter and pulse in a food processor until mixture resembles coarse crumbs, or pinch butter into dry ingredients by hand until crumbly.
  4. Press about two-thirds of crumb mixture firmly into the bottom of the prepared pan.
  5. Bake crust for 15 minutes until edges are golden. Remove from oven and set aside.
  6. In a medium bowl, beat softened cream cheese with ⅔ cup sugar until smooth and creamy (2-3 minutes).
  7. Add egg, vanilla extract, mint extract, and green food coloring; mix until just combined.
  8. Blend in sour cream until smooth.
  9. Pour cheesecake filling evenly over pre-baked crust and smooth the top.
  10. Sprinkle remaining crumb mixture loosely over cheesecake layer without pressing down.
  11. Bake for 35-40 minutes until top crumbs are golden and cheesecake is set but slightly jiggly in center.
  12. Cool completely in pan on a wire rack, then refrigerate at least 3 hours or overnight.
  13. Lift bars out using parchment overhang and cut into squares or rectangles. Wipe knife between cuts for clean edges.
