Irresistible Strawberry Prosecco Popsicles

These strawberry prosecco popsicles combine the sweet, sun-ripened strawberries with bubbly prosecco for a refreshing and festive summer treat that’s quick and easy to make.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup (240 ml) dry prosecco
  • 23 tablespoons granulated sugar, adjust to taste
  • 1 tablespoon fresh lemon juice
  • 1/2 cup (120 ml) water
  • Optional: fresh mint leaves or a splash of vanilla extract

Instructions

  1. Rinse 2 cups (about 300 grams) of fresh strawberries, hull and slice them.
  2. In a blender, combine sliced strawberries, 2-3 tablespoons sugar, 1 tablespoon lemon juice, and 1/2 cup water. Blend until smooth, about 1-2 minutes.
  3. Pour in 1 cup (240 ml) chilled dry prosecco and pulse gently a few times to combine without losing fizz.
  4. Taste and adjust sweetness or tartness by adding more sugar or lemon juice as needed.
  5. Pour mixture into popsicle molds using a funnel or measuring cup with a spout, leaving room at the top for expansion.
  6. Insert popsicle sticks and freeze for at least 6 hours or overnight.
  7. To unmold, run warm water over the outside of the molds briefly and slide popsicles out.

Notes

Do not over-blend after adding prosecco to keep bubbles alive. Adjust sugar based on strawberry ripeness. For non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Use silicone molds for easy removal. Freeze on a flat surface in the coldest part of the freezer for best texture.
