  • 1 cup shredded mozzarella cheese (100 grams)

  • 2 tablespoons green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 package pre-made pizza dough (about 13.8 oz / 390 grams)
  • 1 tablespoon olive oil for brushing
  • Optional toppings: 1/4 cup sliced black olives (35 grams), 1/4 cup crumbled cooked bacon (30 grams), fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine shredded chicken, ranch dressing, mozzarella, cheddar, green onions, garlic powder, paprika, and black pepper. Mix until creamy with visible chicken bits.
  3. On a lightly floured surface, roll the pizza dough into a roughly 12×10 inch (30×25 cm) rectangle about 1/4 inch (6 mm) thick. Let rest 5 minutes if dough resists rolling.
  4. Spread the filling evenly over the dough, leaving a 1/2 inch (1.3 cm) border around the edges.
  5. Starting from the longer edge, roll the dough into a tight log and pinch the seam to seal.
  6. Slice the log into 12 equal pieces, about 1 inch (2.5 cm) thick. Dip knife in warm water between cuts if needed.
  7. Lightly brush a muffin tin with olive oil. Place each pinwheel slice cut side up into the cups, pressing gently to fit snugly.
  8. Bake on the middle rack for 18-22 minutes until dough is golden and cheese is bubbling.
  9. Let the pinwheel cups cool for 5 minutes before removing from the tin and serving.

Notes

Do not overfill the pinwheels to avoid sogginess. Roll dough tightly but gently to prevent tearing. Brush tops with olive oil or melted butter for a golden finish. Let pinwheels rest after baking to set the cheese and keep shape. Can be made ahead and refrigerated before baking. Reheat in oven to maintain crispiness; avoid microwaving.
