  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 large egg
  • 1/2 cup (120g) mascarpone cheese
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon espresso powder
  • Unsweetened cocoa powder, for dusting
  • 1/2 cup (90g) chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set them aside.
  2. In a medium-sized bowl, whisk together 2 cups (240g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large mixing bowl, beat ½ cup (115g) unsalted butter, ½ cup (100g) granulated sugar, and ½ cup (100g) brown sugar until light and fluffy, about 2-3 minutes. Add ½ cup (120g) mascarpone cheese and continue mixing until smooth.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
  6. Mix in 1 tablespoon of espresso powder until evenly distributed throughout the dough. If desired, fold in ½ cup (90g) chocolate chips for extra indulgence.
  7. Using a tablespoon, scoop out portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set and the tops are slightly cracked. Don’t overbake—these cookies should remain soft and chewy.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack. Once cooled, use a fine mesh sieve to dust a light layer of unsweetened cocoa powder over the tops.
