These irresistible turtle bars are easy to make, unbelievably decadent, and perfect for sharing during the holidays. A buttery shortbread base, gooey homemade caramel, crunchy pecans, and a thick layer of chocolate come together to create dessert magic.

  • 1 cup (230g) unsalted butter, softened
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 tsp salt
  • 1 cup (240ml) heavy cream
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (115g) unsalted butter
  • 1/4 cup (60ml) light corn syrup
  • 1/2 tsp vanilla extract
  • 2 cups (350g) semisweet chocolate chips
  • 1 cup (120g) pecans, toasted and chopped
  • Sea salt (optional, for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the flour and salt, mixing until the dough comes together. Press the dough evenly into the bottom of your prepared 9×13-inch pan. Bake for 18-20 minutes, or until lightly golden. Let it cool completely.
  2. In a heavy-bottomed saucepan, combine the heavy cream, brown sugar, butter, and corn syrup over medium heat. Stir constantly until the mixture begins to boil. Reduce the heat to medium-low and simmer for about 10 minutes until thickened. Stir in the vanilla extract.
  3. Once the caramel is ready, pour it evenly over the cooled shortbread base. Use a spatula to spread it to the edges. Allow the caramel to set for 15-20 minutes before adding the topping.
  4. Melt the chocolate chips in the microwave in 20-second intervals, stirring after each, until smooth. Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula.
  5. Sprinkle the toasted, chopped pecans over the chocolate layer. Add a pinch of sea salt if desired.
  6. Refrigerate the bars for at least 2 hours, or until fully set. Use a sharp knife to slice into squares or rectangles. Serve and enjoy!
