  • 1 lb Italian sausage (mild or spicy, casing removed if using links)
  • 4 medium Russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: red pepper flakes, shredded Parmesan for garnish

Instructions

  1. Peel and dice the potatoes, chop the onion, and mince the garlic. Set aside.
  2. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it into small pieces with a wooden spoon. Remove the sausage with a slotted spoon and set aside.
  3. In the same pot, add the onion and sauté for 3-4 minutes until softened. Add the garlic and cook for another minute, stirring frequently.
  4. Pour in the chicken broth and bring to a gentle boil. Add the diced potatoes and reduce heat to a simmer. Cook for 15-20 minutes, or until the potatoes are tender.
  5. Add the heavy cream and stir well. Toss in the spinach or kale and let it wilt for 2-3 minutes.
  6. Add the cooked sausage back to the pot and mix everything together. Season with salt and pepper to taste.
  7. Let the soup simmer for another 5 minutes to blend the flavors. Serve hot with crusty bread or a side salad.

Notes

For a lighter version, substitute heavy cream with half-and-half or unsweetened coconut milk. Add spinach or kale at the end to retain their vibrant color and texture. Adjust seasoning carefully if using low-sodium broth.
