  • 2 pounds Russet potatoes, peeled and diced
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese (optional)
  • Chopped green onions for garnish

Instructions

  1. Heat the unsalted butter in a large soup pot over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, just until fragrant.
  2. Add the peeled and diced potatoes to the pot, followed by the chicken broth. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until the potatoes are fork-tender.
  3. Using a blender or potato masher, carefully blend or mash the potatoes until the soup reaches your desired consistency.
  4. Stir in the heavy cream, Cajun seasoning, smoked paprika, salt, and pepper. Simmer for another 5 minutes to let the flavors meld.
  5. Meanwhile, cook the bacon in a skillet until crispy. Crumble it into bite-sized pieces and set aside.
  6. Ladle the soup into bowls and top with shredded cheddar cheese, crumbled bacon, and chopped green onions. Serve warm and enjoy!

Notes

Adjust the spice level by adding more or less Cajun seasoning. If the soup gets too thick, add a splash of chicken broth or water to thin it out.
