  • 1/4 teaspoon black pepper
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup diced red bell pepper (optional)
  • 1/4 cup diced mushrooms (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your muffin tin with non-stick spray or butter.
  2. Fry the bacon in a skillet until crispy, then let it cool and crumble into small pieces. Set aside.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth.
  4. Stir in the shredded cheddar cheese, crumbled bacon, and green onions (if using). Add optional ingredients like bell peppers or mushrooms if desired.
  5. Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full. Distribute the fillings evenly.
  6. Place the muffin tin in the oven and bake for 18-22 minutes or until the egg bites are set and lightly golden on top.
  7. Let the egg bites cool for 5 minutes before carefully removing them from the tin. Serve warm or at room temperature.

For extra flavor, sprinkle a little cheese on top before baking. Let the bites cool slightly before removing them to prevent tearing or breaking.
