This easy baked chicken breast recipe features a sweet and tangy maple Dijon glaze that keeps the chicken juicy and flavorful. With just a handful of pantry staples and five simple steps, it’s a fuss-free dinner perfect for busy weeknights or special occasions.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced (or 1 teaspoon jarred minced garlic)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme or rosemary, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels.
  2. In a medium bowl, whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, minced garlic, salt, black pepper, and fresh herbs if using, until smooth and slightly thick.
  3. Place chicken breasts in a baking dish. Pour half the glaze over the chicken, turning to coat all sides. Reserve the remaining glaze for basting.
  4. Bake for 15 minutes. Remove from oven, brush or spoon the remaining glaze over the chicken, and return to oven. Bake for another 8-12 minutes, until the internal temperature reaches 165°F (74°C). Tent with foil if glaze browns too quickly.
  5. Remove from oven and let chicken rest for 5-10 minutes before slicing. Spoon extra glaze from the pan over the chicken before serving, and garnish with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken in half the glaze for 30 minutes before baking. Use chicken breasts of similar thickness for even cooking. The glaze can be made ahead and stored in the fridge for up to 3 days. For a meat-free version, use firm tofu slabs. The recipe is naturally gluten-free—just check your mustard label. Leftovers are delicious cold in salads or sandwiches.
