Sweet and savory roasted carrots glazed with pure maple syrup, olive oil, and a hint of spices, perfect as a quick and flavorful side dish.

  • 1.5 pounds fresh carrots, peeled and cut into sticks or halves
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 teaspoon fresh or dried thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Peel and cut 1.5 pounds of carrots into evenly sized sticks or halves, about 3 inches long and 1/2 inch thick.
  3. In a medium mixing bowl, whisk together 3 tablespoons pure maple syrup, 2 tablespoons olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and if using, 1/4 teaspoon ground cinnamon and 1 teaspoon thyme until smooth and glossy.
  4. Add the carrots to the bowl and toss until every piece is well coated with the glaze.
  5. Spread the carrots out in a single layer on the prepared baking sheet without overcrowding.
  6. Roast in the oven for 20-25 minutes, flipping the carrots halfway through (around 12 minutes) using tongs or a spatula for even cooking and caramelization.
  7. Optionally broil for 1-2 minutes at the end for deeper caramelization, watching closely to avoid burning.
  8. Serve warm, fresh out of the oven when the glaze is sticky and carrots are tender.

Notes

Use fresh, firm carrots for best results. Toss carrots gently when flipping to avoid breaking the glaze. For extra flavor, broil briefly at the end but watch carefully to prevent burning. If carrots seem dry after roasting, toss with a little extra maple syrup and olive oil before serving.
