  • 1 cup heavy cream

  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the crust: If using a store-bought graham cracker crust, set it aside. For homemade, crush graham crackers finely and mix with melted butter and a pinch of sugar. Press into a pie dish and chill.
  2. Melt the marshmallows: In a small saucepan over low heat, melt the mini marshmallows with 2 tablespoons of heavy cream. Stir constantly to prevent sticking. Set aside to cool slightly.
  3. Whip the cream: In a mixing bowl, whip the remaining heavy cream until stiff peaks form. Be careful not to over-whip.
  4. Make the pumpkin mixture: In another bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and a pinch of salt. Mix until smooth.
  5. Combine the filling: Fold the cooled marshmallow mixture into the pumpkin mixture. Gently fold in the whipped cream until fully incorporated. The filling should be light and fluffy.
  6. Assemble the pie: Pour the filling into the prepared crust, smoothing the top with a spatula.
  7. Chill the pie: Refrigerate for at least 4 hours or overnight for best results.
