  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 ½ cups heavy cream, whipped
  • 6 ounces semi-sweet chocolate chips
  • ¾ cup heavy cream
  • 1 cup whipped cream (store-bought or homemade)
  • Chocolate shavings or chopped peanuts (optional, for garnish)

Instructions

  1. Crush the chocolate cookies into fine crumbs using a food processor. Add melted butter and mix until the crumbs are evenly coated. Press the mixture into the bottom and sides of a 9-inch pie dish to form an even crust. Chill in the refrigerator for at least 20 minutes.
  2. In a mixing bowl, beat the cream cheese and peanut butter together until smooth and creamy. Gradually add powdered sugar and mix until well combined. Fold in the whipped cream gently until the mixture is light and fluffy. Spread the mousse evenly over the chilled crust and return to the refrigerator.
  3. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (don’t let it boil). Remove from heat and pour over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth and glossy. Let the ganache cool slightly before spreading it over the peanut butter mousse layer. Refrigerate again to set.
  4. Once the ganache is firm, spread whipped cream over the top using a spatula or piping bag for a decorative finish. Garnish with chocolate shavings or chopped peanuts if desired.
  5. Refrigerate the pie for at least 3 hours or overnight before serving. Slice and enjoy!
