  • 4 ounces soft goat cheese (chevre)
  • 10 slices thin-cut bacon, halved
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Using a small knife, make a lengthwise slit in each date and gently remove the pit if not already pitted.
  3. Spoon about a teaspoon of goat cheese into each date. Soften goat cheese by letting it sit at room temperature for 10 minutes or microwaving briefly for 10 seconds if needed.
  4. Wrap half a slice of bacon snugly around each stuffed date. Secure with a toothpick if needed.
  5. Place the wrapped dates on the prepared baking sheet, spaced slightly apart. Drizzle honey over each wrapped date.
  6. Bake for 20-25 minutes, turning halfway through, until bacon is crispy and golden.
  7. Remove from oven and let cool for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. Soften goat cheese for easier stuffing. Turn dates halfway through baking for even crisping. Do not overcrowd the baking sheet to avoid soggy bacon. Drizzle honey after wrapping for a glossy finish. Optional: add chili flakes to goat cheese for heat.
