Perfect Bacon Wrapped Filet Mignon with Blue Cheese Butter

A quick and easy recipe featuring tender filet mignon wrapped in crispy bacon and topped with creamy blue cheese butter, perfect for weeknight dinners or special occasions.

  • 4 center-cut filet mignon steaks, about 6 oz (170 g) each
  • 8 slices thick-cut bacon (2 per filet)
  • ½ cup (about 75 g) crumbled blue cheese (Roquefort or Gorgonzola preferred)
  • ¼ cup (56 g) unsalted butter, softened
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • Freshly ground black pepper, to taste
  • Kosher salt, to taste

Instructions

  1. Prepare the Blue Cheese Butter: In a bowl, combine softened unsalted butter, crumbled blue cheese, minced garlic, chopped parsley, and a pinch of freshly ground black pepper. Mix well. Roll the mixture into a 1-inch diameter log using plastic wrap or parchment paper. Refrigerate for at least 30 minutes.
  2. Season the Filets: Pat the filet mignon steaks dry with paper towels. Generously season all sides with kosher salt and freshly ground black pepper.
  3. Wrap the Filets with Bacon: Wrap two slices of thick-cut bacon around each filet, overlapping slightly. Secure with toothpicks if necessary, leaving some of the top exposed.
  4. Preheat Oven and Skillet: Preheat oven to 400°F (200°C). Heat a cast iron skillet over medium-high heat until very hot, about 3-5 minutes.
  5. Sear the Bacon-Wrapped Filets: Place filets in the hot skillet. Sear each side for about 2 minutes until bacon crisps and steak develops a golden brown crust. Sear edges briefly.
  6. Finish Cooking in Oven: Transfer skillet to oven. Cook 5-6 minutes for medium-rare (130°F/54°C), 7-8 minutes for medium (140°F/60°C). Use a meat thermometer for accuracy.
  7. Rest the Steaks: Remove filets from oven, transfer to plate, tent loosely with foil, and rest for 5 minutes.
  8. Serve: Slice rounds of chilled blue cheese butter and place on top of each filet to melt and create a tangy sauce.

Notes

Use thick-cut bacon for better crisping and holding around the filet. Remove toothpicks before serving. Rest steaks after cooking to redistribute juices. Blue cheese butter can be made ahead and refrigerated. For dairy-free, substitute butter and cheese with plant-based alternatives. Broil 1-2 minutes if bacon isn’t crisp enough after oven cooking.
