  • 2 tablespoons fig jam
  • 1/4 cup (30 grams) walnuts, toasted and roughly chopped
  • 1 egg, beaten (for egg wash)
  • Optional: fresh thyme or rosemary sprigs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Toast the walnuts: Heat a dry skillet over medium heat. Add 1/4 cup (30 grams) walnuts and toast for about 3-5 minutes, stirring frequently until fragrant and slightly browned. Remove from heat and let cool.
  3. Prepare the puff pastry: On a lightly floured surface, roll out one sheet of thawed puff pastry to smooth out creases (about 10×10 inches or 25×25 cm).
  4. Place the brie wheel in the center. Optionally, slice off the top rind of the brie to help it melt more easily.
  5. Spread about 2 tablespoons of fig jam over the top of the brie, gently spreading it but leaving some edges visible.
  6. Sprinkle the toasted walnuts evenly over the fig jam layer.
  7. Fold the puff pastry edges up and over the brie, pinching to seal any gaps. Trim any excess pastry if needed to avoid thick lumps.
  8. Brush all exposed pastry surfaces with the beaten egg wash to achieve a golden, shiny crust.
  9. Using a sharp knife, gently score a decorative pattern on the pastry—just shallow cuts, don’t slice through.
  10. Place the wrapped brie on the prepared baking sheet and bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  11. Let the baked brie cool for 5 minutes before serving. Garnish with fresh thyme or rosemary if using.

Keep an eye on the puff pastry after 15 minutes to avoid burning; tent with foil if browning too fast. Trimming excess pastry and folding edges tightly helps prevent cheese leakage. You can brush the pastry twice with egg wash for extra golden sheen. Toast walnuts carefully to avoid burning. Refrigerate assembled brie before baking to reduce leakage if desired.
