  • 1 cup fresh cranberries, rinsed and picked over
  • 1/2 cup pecans, roughly chopped and toasted
  • 2 tablespoons honey
  • Zest of 1 medium orange
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1 sheet puff pastry, thawed (optional)
  • 1 egg beaten with 1 tablespoon water (for egg wash if using puff pastry)
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toast the chopped pecans on the baking sheet for 5-7 minutes, stirring once halfway through. Set aside to cool.
  3. In a mixing bowl, combine cranberries, honey, orange zest, brown sugar (if using), salt, pepper, and chopped thyme. Toss gently to coat.
  4. Using a sharp knife, lightly score the top rind of the brie in a crisscross pattern (skip if using puff pastry).
  5. Place the brie on the prepared baking sheet or in an oven-safe skillet. Spoon the cranberry mixture evenly over the top.
  6. If using puff pastry, roll out the sheet, place the brie in the center, top with cranberries and pecans, fold pastry edges over to seal, and brush with egg wash.
  7. Bake uncovered for 15-20 minutes (or 25-30 minutes if wrapped in pastry) until the cheese is soft and melty and the topping is bubbly.
  8. Let the baked brie rest for 5 minutes before serving. Serve warm with crackers, sliced baguette, or apple slices.

Notes

Bring brie to room temperature before baking for even melting. Toast pecans separately to maintain crunch. Watch the pastry closely to avoid burning; tent with foil if needed. The recipe is forgiving and can be adapted for gluten-free or dairy-free diets by omitting puff pastry or using plant-based cheese and maple syrup.
