  • 3 tablespoons (21 grams) unflavored gelatin
  • 1/4 cup (50 grams) granulated sugar
  • 1/2 cup (120 ml) cold water
  • Pinch of edible gold glitter
  • 1 teaspoon (5 ml) lemon juice (optional)

Instructions

  1. Pour 1/2 cup (120 ml) cold water into a bowl, sprinkle 3 tablespoons (21 grams) unflavored gelatin evenly on top, and let it sit for 5 minutes to bloom.
  2. Gently heat the bloomed gelatin in the microwave for 15-20 seconds or over a double boiler until liquid. Stir well to dissolve completely without lumps.
  3. In a separate bowl, combine 1/4 cup (50 grams) sugar and 2 cups (480 ml) Champagne. Stir until the sugar dissolves fully. Add 1 teaspoon (5 ml) lemon juice if desired.
  4. Slowly pour the warm gelatin into the Champagne mixture, whisking constantly to blend smoothly and prevent clumping.
  5. Carefully distribute the mixture into jello shot cups or silicone molds, leaving a small gap at the top.
  6. Sprinkle a small pinch of edible gold glitter on top of each shot.
  7. Place the shots in the refrigerator and chill for at least 4 hours or preferably overnight until set but still jiggly.
  8. Pop the shots out of molds or serve directly in cups.

Notes

Use a dry or brut Champagne for best flavor. Bloom gelatin properly to ensure perfect setting. Avoid shaking the mixture after adding gelatin to prevent bubbles.
