Instructions

  1. Wash and dry strawberries thoroughly, ensuring they are completely dry to prevent chocolate from seizing (about 10 minutes).
  2. Line a baking sheet with parchment paper. Insert a wooden skewer into the stem end of each strawberry, leaving enough length to hold comfortably.
  3. Melt the semi-sweet chocolate with 1 tablespoon of vegetable or coconut oil in a microwave-safe bowl in 30-second bursts, stirring until smooth (2-3 minutes total), or melt over a double boiler.
  4. Dip each strawberry into the melted chocolate, swirling to coat evenly. Let excess chocolate drip off before placing on the parchment-lined baking sheet. Reheat chocolate if it thickens.
  5. Chill dipped strawberries in the refrigerator for about 15 minutes until chocolate firms up.
  6. Melt white chocolate (if using) similarly, thinning with a teaspoon of oil if needed. Drizzle white chocolate over the dipped strawberries using a fork or spoon.
  7. Before chocolate sets completely, sprinkle optional toppings like chopped nuts, shredded coconut, or sprinkles on selected strawberries.
  8. Assemble the bouquet by inserting the skewers, strawberry end up, into a block of floral foam. Arrange tightly and adjust heights for a natural bouquet shape.
  9. Optionally, wrap the bouquet in cellophane or tissue paper and secure with a ribbon or twine (about 10 minutes).
