A tender and juicy bone-in ham glazed with a sweet and smoky honey bourbon and pineapple glaze, perfect for festive gatherings and easy entertaining.

Ingredients

  • Bone-in fully cooked ham (about 8-10 pounds)
  • Honey (1/2 cup)
  • Bourbon (1/3 cup)
  • Brown sugar (1/2 cup, packed)
  • Dijon mustard (2 tablespoons)
  • Pineapple rings (1 can, drained or fresh sliced into 1/2 inch rings)
  • Whole cloves (about 20)
  • Ground cinnamon (1/2 teaspoon)
  • Ground ginger (1/4 teaspoon)
  • Black pepper (freshly ground, 1/4 teaspoon)

Instructions

  1. Preheat your oven to 325°F (163°C). Plan about 15 minutes per pound for heating.
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/4 inch deep. Insert whole cloves into the intersections of the diamonds evenly.
  3. Place the ham flat-side down on a roasting rack inside your roasting pan.
  4. In a small saucepan, combine honey, bourbon, brown sugar, Dijon mustard, ground cinnamon, ground ginger, and freshly ground black pepper. Warm over medium heat, stirring until sugar dissolves and mixture thickens slightly, about 5 minutes. Remove from heat.
  5. Brush a generous layer of glaze over the ham. Arrange pineapple rings on top, securing each with a toothpick if needed.
  6. Tent loosely with aluminum foil and roast in the oven for approximately 1.5 to 2 hours, basting every 20-30 minutes with additional glaze. Remove foil for the last 30 minutes to caramelize glaze and slightly char pineapple.
  7. Check internal temperature aiming for 140°F (60°C) to reheat safely without drying.
  8. Remove from oven and let rest loosely covered for 15 minutes to redistribute juices.
  9. Carve between scored lines or along spiral cuts. Spoon any glaze pooled in the pan over slices before serving.

Notes

If glaze thickens too much while basting, warm gently to loosen before brushing. Tent pineapple with foil if it starts to burn. Use a meat thermometer to avoid drying out the ham. Glaze can be prepared up to 2 days ahead and refrigerated.
