  • 1 cup honey (raw or wildflower honey preferred)
  • ½ cup packed brown sugar (dark brown sugar recommended)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon ground cloves (optional)
  • ⅛ teaspoon ground cinnamon (optional)
  • ¼ cup water or orange juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from its packaging and pat dry with paper towels. Using a sharp knife, score the surface in a diamond pattern about ½ inch deep.
  3. Place the ham on a rack inside your roasting pan.
  4. In a small bowl, whisk together honey, brown sugar, Dijon mustard, apple cider vinegar, ground cloves, cinnamon, and water or orange juice until smooth.
  5. Brush the ham generously with the glaze, making sure to get into the scored cuts.
  6. Cover the ham loosely with aluminum foil.
  7. Roast the ham in the oven for about 1½ to 2 hours (approximately 10-12 minutes per pound), using a meat thermometer to ensure the internal temperature reaches 140°F (60°C).
  8. Every 20-30 minutes, remove the foil briefly and brush more glaze on the ham to build a sticky, caramelized finish.
  9. For the last 20 minutes of cooking, remove the foil to allow the glaze to caramelize and develop a golden crust, watching carefully to avoid burning.
  10. Remove the ham from the oven and let it rest for 10-15 minutes before slicing to keep the juices locked in.

Notes

If the glaze thickens or starts to burn, add a splash of water to loosen it. Use a meat thermometer to avoid overcooking. Score the ham to help the glaze penetrate. Glaze in layers every 20-30 minutes for best caramelization. Tent with foil to prevent burning.
