  • 1 wheel Brie cheese (8 oz / 225 g)
  • 3 tablespoons honey (raw or wildflower)
  • 1/2 cup walnuts (60 g), toasted and roughly chopped
  • 1/3 cup fresh fig jam (80 g)
  • 34 fresh figs, sliced (optional, for garnish)
  • Crackers or sliced baguette, for serving
  • Fresh rosemary or thyme sprigs (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the walnuts on a baking sheet in the oven for 5-7 minutes until fragrant and golden. Watch carefully to avoid burning. Roughly chop and transfer to a mixing bowl.
  3. Pour 2 tablespoons of honey over the toasted walnuts and stir gently to coat.
  4. Place the whole brie wheel in an oven-safe baking dish or small cast-iron skillet. Optionally, score the top lightly with a sharp knife.
  5. Spread the fig jam evenly over the top of the brie.
  6. Scatter the honey-coated walnuts on top, pressing down lightly so they stick.
  7. Bake the brie for 15-20 minutes until the cheese is soft and starting to ooze around the edges but not runny.
  8. Remove from the oven and let sit for 2-3 minutes.
  9. Garnish with fresh sliced figs and rosemary or thyme sprigs if using.
  10. Serve warm with crackers, baguette slices, or apple slices. Cut into wedges or spoon the melted cheese and toppings onto your serving vessel.

Notes

Do not overbake the brie to avoid it becoming an oily puddle. Toast walnuts evenly in a single layer and stir halfway through. Warm honey slightly if thick to coat walnuts better. Let the baked brie rest 2-3 minutes before serving to set slightly. For gluten-free, serve with gluten-free crackers or apple slices. For vegan, substitute brie with cashew-based cheese and honey with agave syrup or maple syrup.
