  • 1/2 cup (115 g) unsalted butter, softened
  • 3 cloves garlic, finely minced

  • Zest of 1 small lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon paprika
  • Lemon wedges for serving (optional)

Instructions

  1. Prep the lobster tails (10 minutes): Using kitchen shears, carefully cut down the center of each shell lengthwise, stopping just before the tail fin. Gently pry the shell apart and lift the lobster meat, resting it on top of the shell.
  2. Make the garlic herb butter (5 minutes): In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, lemon zest, salt, black pepper, and paprika. Mix thoroughly until well blended.
  3. Butter the lobster tails (3 minutes): Using a pastry brush or spoon, generously spread the garlic herb butter over the exposed lobster meat. Reserve a tablespoon of the butter mixture for basting later.
  4. Preheat your broiler (5 minutes): Position the oven rack about 6 inches (15 cm) from the broiler element and preheat the broiler on high.
  5. Broil the lobster tails (8-10 minutes): Place the baking sheet with the lobster tails under the broiler. After 5 minutes, baste the tails with the reserved butter and continue broiling until the lobster meat is opaque, firm to the touch, and registers 135°F (57°C) on an instant-read thermometer.
  6. Rest and serve (2 minutes): Remove the lobster tails from the oven and let them rest for a couple of minutes. Serve immediately with lemon wedges.

Notes

Use softened butter for easy mixing and better flavor melding. Watch the lobster carefully under the broiler to avoid overcooking. Rest lobster briefly before serving to redistribute juices. You can prepare the garlic herb butter a day ahead to enhance flavors. For a dairy-free option, substitute butter with almond butter or vegan butter. If broiler is too intense, finish cooking in a 400°F oven after broiling.
