  • 2 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened (227 g)
  • 2 cups sugar (400 g)
  • 4 large eggs, room temperature
  • 1 cup buttermilk, room temperature (240 ml)
  • 2 tsp vanilla extract
  • 1 ½ tbsp red food coloring (gel-based recommended)
  • 2 tbsp cocoa powder
  • 1 cup fresh or frozen blueberries, pureed (150 g)
  • 1 tbsp blue food coloring (optional)
  • 1 tsp extra vanilla extract (for white layer)
  • 8 oz cream cheese, softened (227 g)
  • ½ cup unsalted butter, softened (113 g)
  • 4 cups powdered sugar (480 g)
  • 2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder (for red layer only). Set aside.
  3. In a large bowl, cream butter and sugar with an electric mixer until pale and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, mixing well after each addition. Stir in 2 tsp vanilla extract.
  5. Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix gently after each addition.
  6. Divide batter evenly into three bowls.
  7. To one bowl, add red food coloring and fold until uniform.
  8. To second bowl, fold in pureed blueberries and optional blue food coloring.
  9. To third bowl, stir in extra teaspoon vanilla extract.
  10. Divide each batter evenly into prepared pans and smooth tops.
  11. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  12. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  13. For frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
  14. Assemble cake by placing blue layer on serving plate, spreading frosting on top, then white layer with frosting, and red layer on top.
  15. Cover entire cake with remaining frosting, smoothing sides and top.
  16. Optional: Garnish with fresh blueberries, strawberries, or edible stars.
  17. Chill cake for at least 1 hour before slicing.

Notes

Use gel-based food coloring to avoid thinning the batter. Cool cakes completely before frosting to prevent sliding. For dairy-free frosting, substitute cream cheese with coconut cream. Use a sharp knife warmed under hot water for clean slicing. Baking strips help even layers. Blueberry puree can be strained for smoother texture or left with seeds for more texture.
