A festive and easy-to-make brownie tray decorated like an American flag with whipped cream and fresh berries, perfect for summer celebrations.

Ingredients

Scale
  • 1 box of brownie mix (recommend Ghirardelli or homemade brownie recipe)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil (or as directed by brownie mix)
  • 1/4 cup water, room temperature
  • 2 cups heavy whipping cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh blueberries, washed and dried
  • Fresh strawberries, sliced thinly (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, combine brownie mix, eggs, oil, and water according to box instructions or homemade recipe. Stir gently until smooth and shiny, about 30 seconds. Avoid overmixing.
  2. Pour batter evenly into a greased 9×13 inch pan. Bake for 25-30 minutes or until a toothpick inserted near the center comes out with a few moist crumbs. Let brownies cool completely in the pan on a wire rack (about 1 hour).
  3. Chill mixing bowl and beaters in fridge for 10-15 minutes. Pour cold heavy cream into bowl, add powdered sugar and vanilla, then whip on medium-high speed until stiff peaks form (4-6 minutes).
  4. Spread a generous layer of whipped cream evenly over cooled brownies. Place a cluster of fresh blueberries in the upper left corner (about one third length and half height of pan). Create horizontal stripes by alternating rows of whipped cream and sliced strawberries or just whipped cream.
  5. Optionally pipe small whipped cream stars over blueberry section. Chill the tray in the fridge for at least 30 minutes before serving.

Notes

Do not decorate brownies while warm to prevent whipped cream from melting. Use cold equipment and cream for best whipping results. Fresh berries are preferred; if using frozen, thaw and pat dry thoroughly. Brownies can be made a day ahead and stored covered at room temperature. Whipped cream topping should be made and assembled just before serving. For gluten-free, use gluten-free brownie mix. For dairy-free, substitute heavy cream with coconut cream but texture will differ.
