  • 1 cup (150 g) fresh strawberries, hulled and chopped
  • 2 tablespoons (20 g) unflavored gelatin powder
  • 1/2 cup (120 ml) cold water
  • 1/4 cup (50 g) sugar (adjust to taste)
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • Optional garnish: whole strawberries or mint leaves

Instructions

  1. Rinse and hull 1 cup (150 g) of fresh strawberries, then chop roughly or puree in a blender for a smooth texture (about 5 minutes).
  2. Pour 1/2 cup (120 ml) cold water into a heatproof bowl, sprinkle 2 tablespoons (20 g) unflavored gelatin evenly over the surface, and let sit undisturbed for 5 minutes to bloom.
  3. Heat the gelatin mixture over a pot of simmering water (double boiler) or microwave in 20-second bursts, stirring until gelatin dissolves completely (2-3 minutes). Avoid boiling.
  4. Stir in 1/4 cup (50 g) sugar and 1 tablespoon (15 ml) freshly squeezed lemon juice until fully dissolved. Adjust sweetness if needed.
  5. Allow the gelatin mixture to cool slightly (2-3 minutes), then gently whisk in 1 cup (240 ml) chilled champagne, being careful not to stir vigorously to preserve bubbles.
  6. Fold in the chopped or pureed strawberries evenly into the gelatin-champagne mixture.
  7. Pour the mixture into small cups or shot glasses, leaving space at the top for garnish if desired.
  8. Chill in the refrigerator for at least 4 hours or until fully set and firm to the touch.
  9. Before serving, garnish each jello shot with a whole strawberry or a mint leaf.

Notes

Bloom gelatin properly in cold water before heating to avoid clumps. Cool gelatin mixture before adding champagne to preserve bubbles. Adjust gelatin amount for desired firmness. Chill at least 4 hours or overnight for best texture. Use brut or demi-sec champagne for balanced flavor. Substitute sparkling grape juice for a kid-friendly, non-alcoholic version. Agar-agar can be used for a vegan alternative.
